What can I do in PLAYER mode?

I went through the process of configuring the latest version of vco today. It is on a Dev Cluster with Essentials Plus licensing that I'm working on deployment procedures for move production to 5.1. I was uncertain of the licensing model until after the fact.

Now I have a PLAYER only install. What can I do with it if anything if I do not have the ability to create a workflow?

I don't understand why the licensing should be shackled down since Essentials Plus has a very limited scale. I'd like to be able to use it to see if it will be useful for a production implementation.
